Virgin Voyages

Partnering Brand

ERICKIMGROUP is a partnering chef brand of Virgin Voyages. They will create forward thinking + customer driven brand concepts for their on ship restaurant offerings.  Led by Sir Richard Branson, Virgin has entrusted ERICKIMGROUP to reimagine their culinary offerings in multiple outlets.  

The Twelve Thirty Club

Creative Development 

ERICKIMGROUP and Chef Eric Kim Haugen were engaged by James Beard Award nominated Sam Fox of Fox Restaurant Concepts and Author & Edit Hospitality, to develop the supper club menu at the Twelve Thirty Club in Nashville, Tennessee.  The 400 seat restaurant opened in September of 2021, and has gone on to garner extraordinary appeal for locals as well as Nashville's ever growing tourist market.

WAGS Capital

Creative Development + Operations Partner

WAGS Capital engaged ERICKIMGROUP to be their operating partner on a collection of restaurants + other food + beverage concepts.  Located in Salt Lake City, UT, WAGS Capital is a leading hospitality + real estate investment group focused on the development of forward thinking concepts.  Their first concept to be launched is Las Botellas, a new approach to comics + cantina, scheduled to open in the Spring of 2023.

RING ON HOOK

Operational Partner + Consultant

ERICKIMGROUP is an ongoing operational partner and culinary consultant for Ring on Hook, a dynamic hospitality company with a collective of the industry's most respected leaders making up their team.  ERICKIMGROUP collaborates with Ring on Hook on projects which include hotels, private clubs, bars, and restaurants for leading hotel brands and developers.  

Grand Adirondack Hotel

Concept, Operations + Creative Development

ERICKIMGROUP lead the concept development and openings of 3 dining + bar outlets at the Grand Adirondack Hotel in Lake Placid, New York (formerly the Hotel North Woods).  ERICKIMGROUP was hired by Wright Investments, leading their team through all phases of the food + beverage development, marketing, PR, and training.  The Grand Adirondack Hotel opened in August of 2022.

Egg Shop

Operations + Development Consultant

ERICKIMGROUP provided operations consultation and business development for EGG SHOP.  ERICKIMGROUP continues to advise Egg Shop on their global expansion as well as new locations in New York City and throughout the United States.

NOMO Soho Hotel

Operations Management

ERICKIMGROUP provided food + beverage consultation for the NOMO Soho Hotel in New York, New York.  ERICKIMGROUP was engaged by Sapir Organization, a leading real estate investment and development group, to oversee the direction of NOMO Kitchen, Nina's Liquid Lab, and private events.    

Osteria La Baia

ERICKIMGROUP was engaged by Osteria La Baia and Bulldozer Hospitality to develop the menu and assist in pre opening systems, set up + execution, as well as serving as an ongoing consultant.  Located in Midtown Manhattan La Baia opened in the Fall of 2021.
