ERICKIMGROUP was engaged by Kohler Company to oversee the operations of food and beverage programs within four hotels, over ten restaurants, and golf course experience including Whistling Straits and Blackwolf Run (Golf Digest Top 100 Courses). They are developing new food and beverage concepts for Forbes Four Star hotel The American Club and Inn on Woodlake in Kohler WI. Additionally, they lead major food and beverage changes at the Old Course Hotel in Scotland, as well lead culinary operations for the Kohler Food and Wine Festival.
Sonesta Hotels
Concept + Creative Development
ERICKIMGROUP were engaged by Sonesta Hotels to concept and launch their food and beverage programs within their luxury hotel. This includes a full service, three meal per day restaurant, bar, lounge, private events, and room service.
The Global Ambassador

ERICKIMGROUP were engaged by James Beard Award nominated Sam Fox of Fox Restaurant Concepts and Author & Edit Hospitality, to lead creative direction on five unique restaurant concepts within The Global Ambassador Hotel. The hotel was awarded One Michelin Star in 2024.

The Twelve Thirty Club
Creative Development
ERICKIMGROUP and Chef Eric Kim Haugen were engaged by James Beard Award nominated Sam Fox of Fox Restaurant Concepts and Author & Edit Hospitality, to develop the supper club menu at the Twelve Thirty Club in Nashville, Tennessee. The 400 seat restaurant opened in September of 2021, and has gone on to garner extraordinary appeal for locals as well as Nashville's ever growing tourist market.
RING ON HOOK

ERICKIMGROUP collaborates with Ring on Hook on projects which include hotels, private clubs, bars, and restaurants for leading hotel brands and developers.
Grand Adirondack Hotel

ERICKIMGROUP lead the concept development and openings of 3 dining + bar outlets at the Grand Adirondack Hotel in Lake Placid, New York (formerly the Hotel North Woods). ERICKIMGROUP was hired by Wright Investments, leading their team through all phases of the food + beverage development, marketing, PR, and training. The Grand Adirondack Hotel opened in August of 2022.

ERICKIMGROUP provided food + beverage consultation for the NOMO Soho Hotel in New York, New York. ERICKIMGROUP was engaged by Sapir Organization, a leading real estate investment and development group, to oversee the direction of NOMO Kitchen, Nina's Liquid Lab, and private events.
